This objective of the research was to determine the effect of powdered papaya sap addition on lamb violence. A factorial completely randomized design was used in this research and consisted of two factors, namely papaya sap addition (California papaya, local papaya and mountain papaya) and lubrication time (10, 20 and 30 minutes). All experiment was carried out in triplicates.The observed parameters in this study included physical characteristics (hardness) and chemical characteristics (pH value, water content, ash content, protein content and fat content). The results revealed that papaya sap addition had sigificant effects on texture, pH value and water content, whereas lubrication time had sigificant effects on texture and water content of lamb. In conclusion, lamb treated with powdered papaya sap from Carica pubescens Lenne & K. Koch for 30 minutes revealed the best result.
